Mash tofu to a crumbly consistency; add mayonnaise, mustard and seasonings. Mix well. Add vegetables and mix again. Serve on lettuce leaves or in sandwiches with lettuce or sprouts. Vary the seasonings to taste and try using other herbs or vegetables like parsley, chives or grated carrot. Remember: most commercial mayonnaises are made with eggs, so it won't truly be "eggless" egg salad unless you use an eggless mayonaise or make your own (which you can do with Ener~G's Egg Replacer).
