Blend the dry ingredients and set aside: • 1-3/8 cup flour • 1 tsp. cream of tartar • 1/2 tsp. baking soda • 1/4 tsp. salt Mix until light and fluffy: • 1/2 cup shortening (margerine works better than butter or vegetable shortening) • 3/4 cup sugar Then add: • 1 egg (or equivalent in egg replacer) • 1/2 tsp. vanilla Gradually add dry mixture to sugar mixture. Prepare coating:• 2 Tbls. sugar • 1 tsp. cinnamon Roll the dough into 1" balls. Roll the dough balls in the sugar~cinnamon mixture (I often slightly flatten the balls first).
